The bywords here are territory and a short supply chain. Pro Loco Dol was opened in 2013 by Vincenzo Mancino in the working-class district of Centocelle. It is a landmark in this city, considering that the Dol brand deals with the distribution of excellent food products from Lazio. The establishment is characteristic, curated in its furnishings and very welcoming with well-distanced tables, a great blackboard and a long counter of cheeses and cured meats. The staff is kind and very well-prepared. Numerous products from Lazio stand out here, both high-profile items and some interesting rarities. They are especially valorized by the kitchen at Pro Loco Dol, and include products such as Sabina pecorino, goat Candidum, San Vittore conciato or the cured meats from local swine from the Monti Lepini and Reatini. The pizza is the pan type, prepared with a long leavening time and a mix of 00 flour and spelt flour. The Gricia and the 4 Formaggi with compote are both very good. There is a rich wine list.
