The philosophy “Pro Loco DOL” (all products from Lazio, which in Italian constitutes the acronym DOL) of Vincenzo Mancino has been transferred into this lovely establishment here in Trastevere. He is an expert scout of the territory who is attentive to an inclusive and sustainable economy. The locale is managed by his wife Elisabetta with passion and competency. The cooking is simple and immediate and, most importantly, the pizza here is very well made. There is a curated selection (which is continually updated and experimented with) of flours that are perfectly leavened for a tasty and crunchy crust. The menu is small but effective, and it is divided into sections: focaccias, white pizzas and red pizzas. You will find classic proposals but also original seasonal delights. In summer, for example, you must not miss the “scapece” with zucchini cooked on the embers of the josper oven (a plus of this locale), creamed ricotta, mint and fiordilatte from Pontino. All of this is served a dining area by a gracious staff. The wine and beer list is contained, yet always curated and updated.
