The pizza at Spiazzo is unique. It is one that has always, from the beginning, focused on crunchiness. In other words, that feature that makes the Romans go wild. This is especially the case with the pizza in a “ruoto” (a small round baking pan), a specialty that was subsequently introduced in the menu. The fried offerings are tasty and well-executed, while the pizza selection is divided into the classic options and the ones in the ruoto. The dough is leavened admirably, and the result is a thin disk with a high, crunchy crust. Overall, it is very convincing, especially if you order a tasting menu. The ingredients and toppings are high quality, even if there was a bit of repetition in the use of burrata. With the nice weather post-COVID, all of the tables have been moved outdoors where there is a truly pleasant atmosphere. The small beverage list is a lovely accompaniment.
