In the Castiglione district of Sicily, at the foot of Etna, Salvatore Giardina proposes a selection of pizzas with natural leavenings and delicious plates that vary following the seasonality of the raw materials. The dough is nice and bubbly and the use of stone-ground, semi-whole wheat flours gives fragrance and crunchiness to the pizza. It is topped with important, quality ingredients such as anchovies from Sciacca or wild vegetables. The dishes proposed by the kitchen are also excellent; they vary continually, thereby guaranteeing freshness and quality in the ingredients. Start with the tagliere; you will have the opportunity to try salamis and cheeses from the territory that have been meticulously selected by Salvatore. The cantina is excellent, and boasts an enormous selection of Enta wines, and a few labels from the rest of Italy and Europe.
In summer and spring you can dine outdoors in a lovely little side street. The service is knowledgeable and professional.
