A strong Mediterranean wind is blowing in the nineteenth-century market of the ancient capital. The pizzeria of Angelo and Filomena Tursi has a “market counter” formula: you eat at the stall or order takeaway. The pizza has a high crust and is made with a creative flair. The dough is carefully prepared and the gas oven does the rest at a temperature that gives the pizzeria its name. The ingredients used are flown in from Italy every week. The creativity here, where Italy meets Santa Claus’ native land, provides for great combinations. You can try a white pizza with cold-smoked salmon, sour cream and dill. Among the red pizzas, there is the ‘nduja and onion. The north-south combination is the most convincing with Gorgonzola, onion, lemon zest and bacon. It costs about 14 euros.
