In Abruzzo Carpe Diem is a tried and tested reality that has brought authentic Neapolitan pizza to the region. The menu changes with the seasons, following the natural seasonality of the ingredients which are always top quality, authentic and local. Thanks to an careful sourcing of the flour, which cannot be discounted, there is a constant development of technique, which involves a long-lasting leavening process. To emphasise this work even further, the Laboratorio Impasti was created, a project which includes continuous experimentation, but which also conveys the art of pizza making to young people.
