Historical pizzeria, located in the heart of Varese, has been able to renew itself with creative ideas alongside more traditional offerings. The distinctive feature, in addition to the many ingredients from Puglia, are the “shot glasses” placed in the center of some pizzas (perhaps a bit inconvenient to handle): inside, fresh dairy products to add raw, and to taste. For example, on the Zolina pizza, with buffalo blue cheese and Gargano mozzarella, to be completed with small pieces of Andria cream and a jar of fresh cherry tomato sauce. Among the delights, good fried pizzas and a curious trio of “pizza sushi” with poppy seed crust. The high level of the wine and Champagne list is positively surprising.
