At the two locations in Perdizes and Jardins, in São Paulo, the great capital of pizza in Latin America, André Guidon, who has moved from the mixer station to the marble counter, continues to express himself at high levels in the art of pizza, mixing tradition with creativity.
Like in a Neapolitan song or a samba, his pizza, starting from a passion for the classic Neapolitan standard codified by the Avpn regulations, works following his personal rhythm.
The menu is marked by harmonious white and red pizzas, balanced between the crust and excellent toppings, excellent calzones filled with soft ricotta, and inviting golden fried pizzas.
All start from a well-leavened dough, very light, tasty, and “digestible” that provides a comfortable base and refrain for authentically Italian ingredients, chosen with expertise and combined in balance. The result is a slice that, inspired by his Italian family origins, knows how to tell the true Neapolitan sound. These roots are also found in various well-executed Italian dishes: faithful to tradition is the Eggplant Parmigiana, delicious meatballs, and very good sausages with friarielli. The use of extra virgin olive oil is very knowledgeable.
The wine list is honest, with Italian and South American labels, and good house wine by the glass.
Desserts are indulgent but light, with an excellent mini pastiera standing out.
The service team, courteous and competent, moves in a simple and welcoming environment, furnished with references to Neapolitan culture and cinema; the bill is fair both for the area and in comparison to other restaurants.
