Danes like strong flavors, like bitterness and acidity, above all in their bread. It is therefore normal that you can taste the sourdough in their pizzas, somewhat more pronounced than in pizzas produced in Italy. It just so happens that the word SURT in Danish means acid, testifying to the fact that here they work with sourdough, and that the Neapolitan inspired pizzas acquire their own character. We are talking about the “Danish style” which Giuseppe Oliva, the owner of this lovely pizzeria, helped to create. Previously he worked for years with Christian Puglisi in his pizzeria Baest. At Surt, the pizza is thin with a pronounced crust, elastic and crispy. If you want to have a more intense treat, consider the pan-baked pizza which is made with dough leavened for double the length of time than that of the normal pizza.
