Under the brim of his iconic hat, Salvaltore Lioniello works diligently at his counter, with his head down and his hands in the dough. He manages a complex organizational team facing the “sold out” numbers on a “quiet” weekday with serenity. The dining rooms are modern with great attention given to details, such as the retro-style floor, constantly trampled by the diligent dining room staff. The dough is moist, soft and elastic, with a soft and well-pronounced crust. The philosophy of the establishment declares itself as being #diversamentenapoletana (#differentlyNeapolitan) and has its own dedicated hashtag. The toppings satisfy both in aesthetics and substance, which is the result of a collaboration with starred chefs. Some examples are the excellent eggplant Scapece with fiordilatte, green chillies, Champagne vinegar, burrata, tuna bottarga and crystallized basil. Or the Marinara, made by the book in a royal version with anchovies from Cetara. There is also a vegan section on the menu. The wine list is well-assorted, and suitable even for the most discerning patron.
