Bráz Pizzeria is a modern brand, born in 1998. It has made history in Brazil. Today 70 professional pizza makers work under this brand in 10 different establishments, many of which are located in San Paolo. The pizza is a “paulista pizza” traditional but different from the Neapolitan one. It’s crisper, bigger, baked in a wood-oven well leavened and very digestible.  The classic dough is made with a mixture of different types of flour. The dough is indirect, made with mother yeast and left to leaven for 48 to 72 hours. In addition to the style of the toppings, the winning card of this pizzeria is the passion of the owners and their team, as well as the high-quality ingredients used. Some of the ingredients are Italian sourced such as tomatoes, flour, Cetara anchovies, and the artichokes and oregano from Sicily. The fior di latte and mozzarella instead come from small local producers.
