In un quartiere appena defilato, con parcheggio non così facile da scovare, Edoardo Papa prosegue imperterrito con i suoi dischi lievitati e cotti a menadito, serviti a spicchi dopo essere stati arricchiti con selezionatissimi prodotti di terra e di mare, ricercati personalmente. Una sezione del menu è dedicata alle proposte ormai classiche, così come uno spazio è testualmente denominato “I piatti del giorno sulle pizze…l’Eccellenza”, basato su stagione e reperibilità. Meritano la sosta sia la Margherita al Rum, sia la pizza con capocollo di cinta e burrata artigianale, così come la proposta con mazzancolle di paranza, mozzarella di bufala, olive e capperi. Qualche sfizio d’entrata, mentre per berci sopra è disponibile una discreta scelta brassicola e una proposta enoica di bella articolazione. Servizio garbato e accogliente, appena sotto pressione davanti al tutto esaurito. In Fucina si aggiudica il Premio per il Miglior Servizio di Sala dell’anno 2018.
