Having travelled around the globe with a passion for pizza he only stopped when after extensive research and study of the dough he found the right formula for balancing the bite - how it melts in your mouth, and the crunchiness - the right crispiness and fragrance. For the toppings, he chooses fresh products following seasonality and the daily availability at the seafood market. He wants his guest to have an experience of taste and hospitality. He often goes out to the dining room to follow the movements of the service.
