There is a perfectionistic and attentive sourcing of the primary materials, from the north to the south of the penninsula and beyond without integration. There are Raschera and Pantelleria capers, or Parma prosciutto crudo aged for 24 months. However it goes beyond that, quite far beyond, to include Canabriche anchovies, or an enticing Pata Negra, for example, in the soft ‘pizz’otto’, which, together with Gioia del Colle burrata, presents a combination never seen before. One derives pleasure and fun in the selection as well as in the tasting of the offerings. Well-made pizza, with the possibility of chosing even the texture and the height. The care given to the doughs and the bakings are full of expertise, and the diverse techniques used evoke, invent, and experiment. Always perfect flavours, we recommend the tasting menu, with samples that are an authentic journey into the perfect quest for the ‘mother of all flavours.’
