Pizzerie Eccellenti 2020
This is a small establishment done in an urban style. It is unexpected and well-curated, with a few little outdoor tables in summer. The wood-fired oven welcomes the patrons together with an attentive and cordial staff. There are 15 pizzas on the menu. They are all named P and then followed by a number (excepting the Oro e Perle which was created in a collaboration with the “I Borboni” pizzeria in Pontecagnano Faiano in the province of Salerno). The menu lists, besides the ingredients, the elements that are added after baking. Added to the 15 weekly pizzas, there are also weekend pizzas and monthly choices. The crust is high, and maximum care has been given to the leavening and to every single ingredient. For this reason, it is not possible to ask for modifications to the pizzas on the menu. The extra-virgin olive oil is organic. There are many DOP products such as Reggiano parmesan and San Marzano tomatoes as well as Slow Food Presidia items like red garlic from Nubia and cacioricotta from Cilento.
