Giuseppe Sauchelli’s pizzeria is thoroughly Neapolitan. He is originally from Arzano (on the outskirts of Naples). Together with his Martinese wife, he opened this authentic Neapolitan pizzeria in Martina Franca just over two years ago. The style is that of a typical working-class establishment, with the fried offerings in a display case (potato crocchè, rice arancini, pasta frittatine, and buffalo-milk mozzarella in batter), an open wood-fired oven and a total of 25 seats including a shared social table. Pizzas are served on wax paper and without flatware. But this is made up for with the uniqueness of the products used and the long leavenings which are at the base of this splendid, entirely Neapolitan pizza baked in a wood-fired oven. Examples include the pizza with Vesuvian cherry tomatoes, anchovies and buffalo-milk mozzarella from Campania. Another is the excellent margherita with fior di latte and tomato sauce from Vesuvian penniolo tomatoes, just to name a few. But daily specials are always available; just ask and trust Giuseppe and Rossella. There are a few good bottles of beer and good wines from Campania.
