This is an elegant place where the enthusiasm of the young pizza chef Emanuel Facchin, an Alma graduate, is evident in every detail. The flours made from old grains such as Timilia, Senatore Cappelli, or wholewheat, have a toasty fragrance which is created by the addition of seeds. The dough also undergoes 72 hours of maturation. The ingredients such as tuna, vegetables, or the salmon that is smoked onsite, are of the highest quality. In addition to the classic pizzas, there are many creative ones. They can be paired with the right beer, wine, or fresh cocktail from the extensive drink menu following the competent advice of the dining room staff. The pizza salmon, fennel, and burratina accompanied by a gin and tonic, for example, is an excellent pairing.
